Recipe | Summer Spinach Salad

i’m a big salad eater. most weeks, i prep ingredients for a salad for lunch or dinner everyday. sometimes it’s caesar or a chopped salad, but lately it’s been this summer spinach salad. i took a recipe from my mom of a salad that she’s been making for years that i really like and tweaked it just a tiny bit. what makes it so good, though, is the homemade dressing. it’s a very simplified french dressing that is so tasty. the crunch of the shaved brussel sprouts with the flavor of the bacon is just too good.
salad ingredients
handful of spinach
1/2-1 cup of shaved brussel sprouts
1/4 cup diced cherry tomatoes
2 hard-boiled eggs, chopped
1/4 cup crumbled bacon
dressing ingredients
1 cup canola oil
1/3 cup ketchup
1/4 cup sugar
1 Tbs worcestershire sauce
1/4-1/2 cup chopped onion (optional)
combine all dressing ingredients in bowl or tupperware container. stir or shake well, until all ingredients are combined. best served chilled.
for the brussel sprouts, i just hand chopped them with one of my big knives to the size that i wanted. you could also buy the pre-shaved sprouts at the grocery store to save some time! i cooked enough bacon and hard-boiled eggs to make several salads so that i could just through them together as i wanted them. toss all the salad ingredients into a bowl together. add the dressing and give it a good stir. salt and pepper to taste.

 

it’s super easy and super yummy for a quick lunch or dinner. it’s also great for a larger group of people, just beware that the spinach will wilt if you dress it too soon before eating!
