Homemade Guacamole

you GUYS. i’m in guac heaven over here. i gave into my ever-present guacamole craving yesterday and made some from scratch and oh. oh oh oh oh oh. i could eat it by the spoonful, but that may be weird. but then again, i don’t care because guac. this also come just in time for your cinco de mayo plans, if you happen to have some. mine will include eating the rest of my guacamole and drinking a margarita.
okay, to the good stuff! this recipe is probably not too unique to other recipes and certainly can be tweaked and worked with, depending on your preferences. i’ve found it to be a really good balance of flavors and textures, so it’s a winner in my book.
what you’ll need:
3 avocados
2 roma tomatoes
1/2 cup salsa (i used store-bought)
1/4 cup sour cream
1/4 cup cilantro
sea salt
juice from 1/2 a lime
how you’ll make it:
start by slicing your avocados in half and twisting the halves apart to separate them.
put the avocado halves in a mixing bowl and mash them using a fork or pastry cutter.

i prefer a chunkier guacamole, so i only mash them so that there aren’t any large pieces left, but not until it’s smooth. it will break down a bit more as you add the liquids and continue to stir it. at this point, i like to squeeze the lime juice on the mashed avocado and stir again.
next, you’ll add the remaining ingredients. depending on your preferences, you can add more or less (or none!) of all of them. the salsa i used had a bit of a kick, so i didn’t feel the need to add a chopped jalapeƱo. if you like some spice, i suggest adding one or some tabasco sauce! you can also add in some chopped red or white onion. really, you can do whatever you want šŸ˜‰
it’s best served fresh! if you have to store it, i suggest keeping one or two of the pits from the avocados and putting them in a tupperware container with the guacamole. i also put a sheet of plastic wrap overtop of the tupperware before snapping on the lid to keep as much air out as possible. avocados can brown quickly, so beware of letting it get too much air!
cheers to homemade guacamole! and to eating it for dinner (which i may or may not have done last night).
