Recipe \ Bacon-Wrapped Tots

happy friday! i’m bringing you the last of the “game day” snacks from my friend Lindsay, of Cooking In Pearls, today! this one is probably my favorite of the snacks we whipped up because bacon + tater tots + cheese. yes, you read that right.
a lot of restaurants in Chicago (and maybe elsewhere, i just never noticed) offer tater tots as a side option. you know, like fries, coleslaw, fruit, salad, TATER TOTS. i always pick the tots, so you better believe i was excited about having them stuffed with cheese and wrapped in bacon.
here’s what you’ll need:
1 bag tater tots, thawed for about an hour
1 package bacon (the thinner, the better)
1/4 cup brown sugar
a handful of cheese cubes (optional)
here’s what you’ll do:
cut your bacon strips into thirds, or just long enough to wrap around a tot
if you’re adding cheese, this is when  you’ll break open the tot and stuff the cheese right in*
wrap each tot and lightly sprinkle with brown sugar
place them seam-side down on a baking sheet
optional – you can use toothpicks to hold the bacon and tots together
bake at 425 degrees until the bacon is crisp and cooked through, about 15-20 minutes
*we stuffed our tots with pepper jack cheese (so good!) and found that the cheese melted pretty quickly, spilling out a bit and looking a little burnt. they turn out a little less pretty with the cheese spilling out, so you could go either way on it! (truthfully, i love the flavor of burnt cheese on a pan, so i was thrilled with how it happened)
at this point, when Lindsay was wrapping and lining them up, i was about ready to snatch one of those tots up and eat it raw. they looked good, even before they looked really good.
and here they are fresh out of the oven! you can see how the cheese spilled out of some of them, but those were the tots i picked up first to pop in my mouth.
so, if you’re looking for a little snack this weekend (or any day), we recommend making these delicious bites.
and yes, even though that study recently came out about how bacon causes cancer, i will likely still eat it. i’m a rebel, i guess.
