Make-Ahead Breakfast Burritos and How I Use Our Walmart+ Membership

The second half of 2020 was spent learning how to balance work, being a mom and wife, taking care of myself, and everything else in life. My plan was always to return to work after Liam was born, but I was not prepared for how steep of a learning curve being a working (from home) mom would be. We’ve found ourselves in a pretty good groove with our schedule and how I balance work versus family time, but it’s difficult! Mike and I talked a lot over the holiday break about what this new year is going to look like for us – what’s been working with our current family dynamic and schedule and what can be edited to improve. It was nice to be able to verbalize it and get it all out on the table, so that we could work together on any changes that needed to be made.

One of the things that I knew I needed to offload from my list is some of the basic household tasks, like grocery shopping. I’ll still go to the grocery store sometimes, but I don’t want to spend an hour every Monday morning doing it when I could be doing something else! Enter: our Walmart+ membership. I’ve used it to get last-minute ingredients for a holiday dessert, restock on food for Liam, and get our weekly groceries delivered. Most recently, I placed an order for everything I needed for make-ahead breakfast burritos!

Like I said, my most recent Walmart+ order was to get everything I needed for make-ahead breakfast burritos. I started making these when Liam was tiny, so that Mike and I had a quick and filling breakfast to eat while tending to him. They’re easy to make, can be customized however you like, and reheat nicely.

Here’s what I use to make them: burrito-sized tortillas, 10-12 eggs, shredded cheddar cheese, diced red pepper and onion, and cooked hash browns.

I start by cooking the hash browns in a skillet. Once they’re cooked, I set them aside to cool. In the same pan, I sauté the diced red pepper and onion for a few minutes. I add in the scrambled eggs and stir until eggs are cooked. To assemble the burritos, I lay out a tortilla, add some hash browns, eggs, and top with shredded cheese. I roll the burrito up (tucking in the sides!) and wrap it in a piece of foil. We store them in the freezer. When we’re ready to reheat one, I take the burrito out of the foil, wrap it loosely in a damp paper towel, and microwave for 2 minutes (flipping halfway through). I usually cut mine in half to make sure that it is warmed through (depending on how thick the eggs are) and eat with a little hot sauce. So delicious and simple! You could easily add bacon or sausage, other vegetables, and more!
